i was wondering if after i install a game using daemon tools, if i unmount it, can i still play it?

Depends of the game...

You can do that for a very small minority (Flatout 1, unpatched comes to my mind, for example)

Usually you can't. Just as you'd have to insert your original disc of the game you want to play, you'll have to have the right image mounted instead if you want to play.
