There is a Windows Integration feature allowing you to use a contextual menu for image operating (mount, create\editm burn, etc) - https://daemon-help.com/advanced/windows_integration/. This feature is paid but has 3 days trial period for testing.
You may also use the association tab which allows you to choose the types of image files that you will be able to use with DAEMON Tools Lite (Preferences - ). This option is free.

Before the update to 10.10 double left clicking the file would mount it. Now it opens Daemon tools, and I have to click Quick Mount and select the file to be mounted.
Daemon Tools is already selected in Choose default app by file type . Right click file>Properties>Opens with: Daemon Tools is selected.
Apparently, you selected DTLite.exe process - http://joxi.ru/BA00qGdhMqK1eA?d=1. Please change it to the DTLite Agent. Then the requested file will be mount as your need.

Using DTLite Agent the screen flashes but no image is loaded. The tray icon appears.
There is no active drive.
In Settings>General>Use tray agent is selected, but not Autorun and Notify about new version and special offers.
Automount is selected.
Create new virtual drive to mount is slected.
When loading an ISO from the tray icon (after double clicking the image with DTLite agent selected for use) a virtual drive is created, but does not disappear from the drives list.
Previous version worked this way.

1. Please remove DAEMON Tools software via Program and Features.
2. We shared the DTCleaner utility that deletes drives, registry threads related to DAEMON Tools from the PC. The link is http://files.disc-soft.com/filer/shared/1500018047/12/ Run DTCleaner under Administrator and press Clean button. Reboot PC after cleaning.
3. Install DT again and run under Administrator. Try to mount the image.

Mounting the ISO works now by double clicking it, but the created drive does not disappear after eject/unmount.

Yes, but did the drive removed itself in the previous versions?
It was actual for an early version of DTLite. Starting from ver. 10.2 and higher the DTLite creates an empty device and mount an image. The device keeps staying when an image unmounted. It pretty useful in case you need a constant virtual drive.
DAEMON Tools Ultra doesn't create empty drives, only during the mounting, which remove either, when an image umounts.
